Job Description: The Food Administrator I organizes and conducts training programs for food service personnel in the therapeutic diet program, and protects and maintains the safety of persons and property. Plans, organizes and directs the therapeutic diet program; plans regular and special therapeutic diets for inmate patients; establishes recipes for use by food productions personnel; authorizes substitution or modification of special diets: interprets physician prescriptions for therapeutic diets and supervises the preparation and service of those diets. Develops nutritional assessments for each inmate patient; counsels inmate patients regarding dietary needs; documents and records in the health record the assessments and care plans; advises clinical staff on any special nutritional needs of the inmate patient. Assists in the selection, training and evaluation of dietary staff; plans/conducts in-service training programs for food service personnel and clinical staff; provides patient education programs for inmates with special dietary needs and/or problems. Requisitions, receives, inspects, stores and inventories supplies; keeps records and prepares reports; supervises the conduct of inmates; inspects food facilities for compliance with sanitary, safety, security and housekeeping standards. Participates on the interdisciplinary health care team of inpatient care planning; attends appropriate in-service training and continuing education classes; maintains Registered Dietician certificate; performs other related duties as assigned by supervisors. ***Salaries will be adjusted accordingly to comply with the provisions of the current furlough programs. “Per Governor's Executive Order #S-13-09, issued 07/01/2009, this position is subject to a pay reduction of 13.85% to facilitate the three furlough days named in the order, which is subject to end on 06/30/2010. Requirements (Minimum Qualifications): One year of experience in California state service performing the duties of a Dietitian or one year of experience in a hospital as a dietitian, nutritionist, or food service manager, with responsibility for the technical direction of a group of diet pantry employees AND equivalent to graduation from college and completion of an approved internship in institutional management of dietetics. (Membership in the American Dietetic Association or eligibility for such membership may be substituted for the required internship.) OR three years experience as a dietitian, nutritionist, or food service manager with responsibility for the technical direction of a group of dietary unity employees, one year of which must have been under the supervision of a professionally trained dietitian AND equivalent to graduation from college either a Bachelor's Degree in Foods, Nutrition, or Institution Management.
