Job Description: Under the direction of the Food Administrator 1-Dietary Manager the Correctional Supervising Cook (CSC) is directly responsible for the preparation, cooking, and tray assembly of nutritionally adequate regular and therapeutic diet, meals according to the 21 day menu cycle for approximately 20 inmate-patients housed in the Correctional Treatment Center (CTC). Additionally, is responsible to conduct and maintain cleaning, sanitation and safety of all equipment, food and supply storage, dish machine and food preparation areas of the diet kitchen. Ensures safe food handling and is responsible for monitoring and documenting food temperatures, final rinse of the dish machine, freezer and refrigerator temperatures, complies with all Title 23 Rules and Regulations, the CTC Policy and Procedure Manual and the Medical Diet Manual. ** Salaries will be adjusted accordingly to comply with the provisions of the current furlough programs.** Additional Information:
